As the name of my blog indicates, I spend a lot of time thinking about home. Of course, my Heavenly Home is the one that is eternal, so that’s where I need to lay up my treasures, and that’s the one I’m striving for. But in the meantime, I have been given this tiny piece of the here-and-now—this home on the edge of town, this family, this neighborhood—in which to serve Him. And, though this is in the earthly realm, I want the things that happen here to be investments in the Heavenly realm.

A Novembery Day


After writing for thirty-one days straight, I am suddenly at a loss for words.  (Don't tell my family I said that...they might hold me to it!)  Do I ramble on about the things that happened in October while I was plugging away at my series?  Should I tell you about this past weekend in which I practiced what I preached  (we hosted a gathering on Saturday evening, and another on Sunday afternoon)?  Or should I share the exciting things that we are anticipating in November?  

I think, for now, I'll do neither.   

Today was a puttering sort of Novembery day.  It was cloudy and chilly, the sort of day that makes you want to light a candle or heat up the tea pot or read a good book.  We did all of it.


We're reading this, one of our favorite Thanksgiving read-alouds, for the umpteenth time.

And what do you have for dinner on such a Novembery day?  Pumpkin waffles, of course!  I made up the batter, and Ron cooked them in the waffle iron.  I found the recipe in a Country Living magazine ten years ago, and it has become an autumn tradition to make them.  The recipe makes scads of them; we always have leftovers.



 The Novembery supper was served on my new brown transferware.  (Happy birthday to me!) 





Pumpkin Spice Waffles


Ingredients:
  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 4 large eggs
  • 2 cups buttermilk
  • 1 cup pumpkin puree
  • 1/2 cup dark brown sugar
  • 1/4 cup melted butter
  • 1 teaspoon vanilla

Directions:
  1. Preheat waffle iron.
  2. Combine flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves and salt in large bowl; set aside.
  3. Beat together eggs, buttermilk, pumpkin puree, sugar, butter, and vanilla in another large bowl (I used my stand mixer) until smooth.  While beating, add the flour mixture and blend until smooth.
  4. Generously coat the waffle iron with vegetable oil and close the batter (my waffle iron holds one cup of batter) and cook in waffle iron according to the manufacturer's instructions.  Repeat with remaining batter.  

Makes 20-24 waffles!

  9. That recipe looks fabulous. I made pumpkin pie muffins recently, and now here's a recipe for waffles. Won't hubby be surprised when I make these for him ... maybe even for breakfast tomorrow.
