As the name of my blog indicates, I spend a lot of time thinking about home. Of course, my Heavenly Home is the one that is eternal, so that’s where I need to lay up my treasures, and that’s the one I’m striving for. But in the meantime, I have been given this tiny piece of the here-and-now—this home on the edge of town, this family, this neighborhood—in which to serve Him. And, though this is in the earthly realm, I want the things that happen here to be investments in the Heavenly realm.

Fruit On Tuesday ~ Week 11 {Cheesecake-Stuffed Peaches}




Today I bring you another recipe courtesy of my friend Jill. She told me that if we liked peaches (we do) and cheesecake (we do), then we'd probably like this dessert.  We do!  

There was a lot of coming and going during the dinner hour this evening. We got dinner ready early so that Kati could eat before she left for work. While she ate, I slid the peaches into the oven. We said goodbye to Kati, prepared for the second dinner shift, pulled the peaches out of the oven, and waited for Ron to arrive.  

Bekah came over to the counter where the peaches were cooling and said longingly, "Are we going to wait for Kati to come home before we eat dessert?"

I glanced at those rows of tempting peaches and answered, "Who's Kati?"  ~smile~

As it turned out, we had finished dinner and were pouring coffee when the phone rang and Ron was called out on a short errand.  Ack! But knowing he wouldn't be long, we did decide to wait for him! 

Were Cheesecake-Stuffed Peaches worth the wait?  We think so!  (Thank you, Jill!)




Ingredients:
6 peaches, halved and pitted
1/4 cup butter, melted
3 tablespoons cinnamon sugar
8-oz. package cream cheese, softened
1/4 cup sugar
1 egg yolk
1 1/2 teaspoons vanilla
Directions:
  1. Preheat oven to 350°F. Line a 15 x 10 x 1-inch baking pan with parchment paper and set aside.
  2. Trim a very thin slice from the round side of each peach half so halves stand flat on the baking pan.
  3. Dip peach halves in melted butter to coat. Arrange peach halves, cut sides up, in prepared pan. Sprinkle cut sides of peaches with cinnamon-sugar; set aside.
  4. In medium mixing bowl, beat cream cheese with a mixer on medium speed until smooth. Add sugar, egg yolk, and vanilla; beat until combined.
  5. Spoon cream cheese mixture into peach centers.
  6. Bake uncovered about 30 minutes, or until lightly browned and softened.
  7. Serve warm or at room temperature. 


P.S. Kati enjoyed her peaches with a cup of hot coffee when she returned from work. She didn't mind that we didn't wait.

  4. These look wonderful! I'm now looking for an excuse to make these...dinner, Tuesday night sounds like a good reason to me...it'll be the first night Tim will eat dinner with us in over a week.
