As the name of my blog indicates, I spend a lot of time thinking about home. Of course, my Heavenly Home is the one that is eternal, so that’s where I need to lay up my treasures, and that’s the one I’m striving for. But in the meantime, I have been given this tiny piece of the here-and-now—this home on the edge of town, this family, this neighborhood—in which to serve Him. And, though this is in the earthly realm, I want the things that happen here to be investments in the Heavenly realm.

Salad On Tuesday: Week 7 {Chicken BLT Salad}


It's time to share the last of the salad recipes shared with me by my dear friend Jill.  This is another inspired by the classic bacon-lettuce-tomato combination, this one with chicken too!  

I served the salad on a large white serving platter, and thought it made a pretty presentation.  Then we tried it, and declared it another keeper.  I suppose you can't go wrong with bacon as an ingredient. ~smile~  And the dressing gave this dish a unique flavor.  It also helped that we used farm fresh tomatoes from a local produce stand, and not the cardboard tomatoes that you get at the grocery store. Mmmmmmm.







Dressing Ingredients:
  • 1/2 cup mayonnaise
  • 4 tablespoons barbecue sauce
  • 2 tablespoons finely chopped onion
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper


Salad Ingredients:
  • 8 cups torn greens
  • 2 large tomatoes
  • 1 1/2 lbs. chicken, cooked and shredded
  • 10 bacon strips, cooked until crisp and crumbled
  • 2 hard boiled eggs, sliced  (I used 4.)


Directions:
  1. In small bowl, mix dressing ingredients; cover and refrigerate until serving time. 
  2. Place greens in a large bowl.  Sprinkle with tomatoes, chicken, and bacon; garnish with eggs.
  3. Serve with dressing.

  1. mmmmmm....I could do this for lunch tomorrow...I have everything ready to go except the eggs! If I get up 15 minutes early I can pull it off! Looks great.

  2. Cheryl, during these oh-so-hot summer weeks, nothing looks much better on a table than a fresh, cold salad. Well, maybe a bowl of chocolate ice cream, but we won't go there! Thanks so much for sharing the recipes. I would like to reach into the screen and grab a plate full of this one!

    And by the way, yes, I thought the dragonfly looked a bit creepy. It's always stunning to me to see details that we never notice with just our human eyes. Who ever gets THAT close to a dragonfly's face?
