As the name of my blog indicates, I spend a lot of time thinking about home. Of course, my Heavenly Home is the one that is eternal, so that’s where I need to lay up my treasures, and that’s the one I’m striving for. But in the meantime, I have been given this tiny piece of the here-and-now—this home on the edge of town, this family, this neighborhood—in which to serve Him. And, though this is in the earthly realm, I want the things that happen here to be investments in the Heavenly realm.

Homemade Pumpkin Butter



I love a schmear of pumpkin butter on homemade bread! I used to buy a jar or two of pumpkin butter every fall...when I could find it, usually at a specialty grocery store or local produce stand. But a few years ago, my daughter Kristin gave me a jar of her homemade pumpkin butter. It was delicious! She assured me that it was easy, so I made some myself.


PUMPKIN BUTTER
original recipe ~here~

Ingredients:
1 14-ounce can pumpkin
1/4 cup plus 2 tablespoons apple cider
3/4 cup sugar
1 tablespoon pumpkin pie spice


Directions:
Combine all ingredients in heavy saucepan.
Bring to a boil over medium heat.

Reduce heat and simmer for 30 minutes; stir approximately every 5 minutes.
Mixture will thicken as it cooks.

Store in refrigerator for up to a month.

  5. I have never had pumpkin butter and the question is why not?! (Okay, I never heard about it before.) So is it used in the same ways that apple butter would be used?

  7. I've never had pumpkin butter either, Cheryl. But I can bet it's good if you like it. I love pumpkin and making it with canned pumpkin sounds like a cinch to make. ♥

  8. Hmmm - those pumpkins on my front porch might have to become butter! My parents used to mix apples and pumpkin to make apple butter. I made Pear butter with our glut of pears a while ago - why not pumpkin butter too!? Thanks for this recipe Cheryl.

  10. Cheryl, I don't know why I've never tried -- or made -- pumpkin butter. I love pumpkin, and apple butter, so why wouldn't I like pumpkin butter. I think maybe it's because I choose apple butter every time because I associate it with my grandma. Any food attached to memories of my grandmothers will always win out! :-) If I decide to try it, though, at least I know where to turn for a good recipe -- thanks!
